Serve these spicy veggies over Jasmine rice for a complete, low POINTS value, one-dish meal.
Ingredients
2 teaspoon vegetable oil
1 medium onion(s), (red) thinly sliced
2 clove garlic, crushed
2 teaspoon Curry Paste, (Thai red)
400 ml Blue Dragon Coconut Milk, Reduced-Fat
2 teaspoon Thai fish sauce
1 medium Pepper, red, cut into ½ inch pieces
225 g carrot(s), (baby)
225 g green beans, cut into ½ inch pieces
250 g regular tofu, firm, cut into ½ inch cubes
4 large leaf basil, small fresh bunch, roughly torn up
Instructions
In large, non-stick frying pan or wok, heat oil. Cook onion and garlic until they begin to brown, 1 to 2 minutes.
Mix curry paste with 2 tablespoons coconut milk. Add with remaining coconut milk and fish sauce to pan. Bring to a boil. Add peppers, carrots, green beans and tofu. Simmer until vegetables are tender, stirring occasionally, 15 to 20 minutes.
